SAWCLicious: Potato Bites - Appetizer Ideas

I was able to finally find SOUR CREAM in Brussels! Yes, for some reason, it was difficult to find it here. So one Friday evening, I searched through some possible ideas for appetizers with sour cream dip and came across good ideas. I made the sour cream based on what I think will work and it went well. I was quite satisfied and so are my friends!

I made just one type of dip. I mixed through the following ingredients in a bowl.
  • 1 pack of sour cream
  • 1 tbsp. Philadelphia Cream Cheese with garlic and herb flavor (you can use ordinary cream cheese)
  • 1 tsp. paprika
  • 2 tbsp. bacon bits (around 4-5 bacon crisps)
  • 2-3 tbsp. of chopped ciboulette (chives)
  • salt & pepper
I then prepared two appetizers: Bacon Wrapped Baby Potatoes, and Potato Stuffed with Shrimps and Sour Cream Dip. Here is how I did it.

Bacon Wrapped Baby Potatoes




Ingredients

  • Baby Potatoes
  • Bacon
  • 2 tsp. dried rosemary
  • Olive Oil
  • Sour Cream Dip
  • Salt & Pepper
Procedure

  1. Wash and dry the baby potatoes. Cut them into half and place in a pot with very cold water. Bring the  pot to a boil and cook until potatoes are soft enough that you can stick a fork without too much resistance.
  2. Drain the potatoes and mix in rosemary, salt, pepper, and olive oil to the potatoes. Set aside for at least 30 minutes.
  3. Wrap each piece of potato with bacon and secure with toothpick. I normally just use half of the bacon for 1 potato. Place the potato in an oven proof dish covered with foil.
  4. Cook in the oven at 200 degrees for 20 minutes.
  5. Serve with the sour cream dip on the side.
Potato Stuffed with Shrimps and Sour Cream Dip


Ingredients
  • Baby Potatoes
  • 2 tsp. thyme
  • Sliced green onions
  • Cooked shrimps
  • Olive Oil
  • Salt and Pepper
  • Sour Cream dip
Procedure
  1. Mix thyme, salt, pepper, with shrimps in a bowl. Drizzle some olive oil and set aside for at least 1 hour. You can keep it in the fridge.
  2. To cook potatoes, follow the same procedure in Step #1 from above recipe.
  3. Once cooked, drain the potatoes and wait until it cools down. Using a teaspoon, create a shallow hole by scooping out some potatoes.  
  4. Once ready to serve, fill in some sour cream dip into the shallow hole. Top the potato with a shrimp and drizzle with a little bit of olive oil. Garnish with green onions.
