One of French friends got to try my version of Spaghetti Bolognese and he really likes it. I thought he was joking. I only got to prove that he really liked it when he finished the left-over pasta for 3 consecutive days!

Spaghetti Bolognaise
Ingredients
- 400grams of ground beef
- 1.5L tomato sauce (preferably tomato puree)
- 150grams fresh mushroom sliced
- 1 large onion diced
- 4 cloves of garlic minced
- 1 large tomato diced
- 2 tsp. dried oregano
- 1.5 tsp. paprika
- 3-4 bay leaves
- 2 tsp. dried parsely
- 2-3 tsp. white sugar
- 2 tbsp. parmigiano-reggiano
- 3-4 tbsp. emmental/guyere cheese
- 4 tbsp. Olive Oil
- pepper and coarse salt
Procedure
- Heat olive oil in a pot and saute onion and garlic until onion becomes soft and translucent.
- Add ground beef and cook until brown around 15-25 minutes.
- Add mushroom and tomato into the pot and cook for another 5 minutes.
- Pour the tomato puree and stir the sauce for 2-3 minutes.
- Mix in paprika, oregano, parsley, bay leaves, salt, sugar, and pepper. Let it simmer in low heat for 2 hours. If you find the sauce to too thick, you can add some water. I normally add a cup of water.
- Lastly, I would mix in parmigiano-reggiano and some pasta cheese (cheedar, emmental, gruyere) and let it simmer for another 10 minutes before serving.
