SAWCLicious Recipes: Beef with Bittergourd in Oyster Sauce ( Beef with Ampalaya)

I'm sharing the other recipe I've cooked for bitter gourd from my post a few weeks ago. I liked the results of the eggs and shrimps with bitter gourd better than this recipe. Maybe this is because I like beef with broccoli better than bitter gourd.

Beef with Bittergourd in Oyster Sauce ( Beef with Ampalaya)


Ingredients
  • Bitter gourd (Ampalaya)
  • 2 whole shallots sliced (or 1 whole white onion)
  • 2 cloves of garlic minced
  • 1 cup of sliced beef
  • 3 tbsp. cornstarch
  • 1 tbsp. flour
  • 3 tbsp. oyster sauce
  • 3 tbsp. soy sauce
  • salt & pepper
  • 1/4 cup tbsp. oil
  • Optional: a knob of ginger sliced


Procedure
  1. Slice the bitter gourd lengthwise. Use a spoon to scoop out the seeds. Then, slice the bitter gourd crosswise (around 1/4 inch thick) to form C-Shaped slices. Gather around 2 cups of sliced bitter gourd. Wash the bitter gourd and soak in a bowl with 4 cups of water and 5 tbsp. of coarse salt for 1 hour.
  2. In a bowl, marinade the sliced beef with 3 tbsp. soy sauce.
  3. After 1 hour, add 2 tbsp. cornstarch and flour to your beef marinade. Then heat a wok with 1/4 cup oil in medium heat. Fry the beef for 2 minutes, make sure you do not overcook it. Set the beef aside.
  4. Drain the oil until only 3 tbsp. of oil remains in the wok. Add the garlic, ginger, and shallots. Once onion is soft, add the bitter gourd and oyster sauce. Do not stir so that it doesn't become very bitter. Add around 1/8 cup of water and let it simmer for 2-3 minutes. Then add the beef.
  5. Let the bitter gourd cook for a few minutes at low heat. Season with pepper and salt (optional).
