SAWCLicious: Baked Chicken Tenders

I am probably part of the large percentage who loves fried chicken. I never did like though the greasy feel of eating fried chicken. Of course, to add that it is very unhealthy. So browsing through Pinterest, I found a good way of preparing fried chicken or should I say baked chicken! 


Baked Chicken Tenders

Ingredients

  • 4 pcs. chicken breast fillet, sliced into 2x2
  • 1 large egg, scrambled with a fork
  • 3 tbsp. all-purpose flour
  • 1 cup panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated Cheddar cheese
  • salt and pepper
  • Olive oil
First, heat oven at 200 degrees and lay the panko bread crumbs in a baking pan. Toast it in the oven until color turns golden brown. Next, prepare 3 bowls. Place the all-purpose flour in the 1st bowl, the scrambled uncooked egg in the 2nd bowl, and the toasted panko bread crumbs, Cheddar cheese, and Parmesan cheese in the 3rd bowl.

The chicken should be dry. Season with salt and pepper and dip in the flour. Shake the excess flour. Then dip it in the egg mixture and lastly on the bread crumbs. Place it in the baking sheet. Bake for 10 minutes on each side at 180 degrees. It should come out crunchy and delicious. Eat it at once for best tasting results!

SAWCLicious: Stir-Fried Asparagus with Chicken

It's going to be Christmas in 4 days! Unfortunately, I don't even feel it as I've been busy with a lot of work that I forgot vacation is starting tomorrow.

While the holiday eating season has not kicked in yet, I'm still into healthy cooking and healthy eating. Recently, I've tried an Asian recipe with my favorite vegetable - ASPARAGUS! Easy to cook and served well with white rice.

SAWCLicious Recipes: Grilled Chicken with Mashed Potato in Corn and Mushroom Cream Sauce

Today is a pampering work day. I took a vacation to destress myself after having to work very long hours for the past few weeks. Body massage - check! Hand nails polished - check! Foot spa and pedicure - check! Dinner with friends - check! and last, a blog post to end my night. 

This time sharing a very simple meal that I cooked which my colleagues really like.  I grilled chicken thighs through a pan with Corn and Mushrooms cream sauce I made. I also made mashed potatoes on the side and used the same sauce.

SAWCLicious: Baked Parmesan Chicken

I'm very fortunate that my job allows me to work from home every Tuesday and Friday. While it is always nice to have this benefit, I also have to worry about what to eat especially since I'm alone. It's always bad when I don't have left-over in the fridge that you can reheat as it means I need to cook. Thus, I would normally find recipes that are easy to make. My favorite is to find dishes that I can just stick a pan into the oven and let it cook worry-free while I work. It also means less cleaning afterwards.

Baked Parmesan Chicken is a common recipe you find in the Internet. I changed a bit by using Japanese Bread Crumbs since that's all I got. I also used the Kraft Parmesan cheese that you can find easily in the grocery and I used thigh fillet since I got to find some in the grocery (which I rarely do here in Brussels!) I must say, I really love this dish! This could be my WFH recipe starting today!

SAWCLicious: Chinese Chicken Adobo

I was quite busy with work for the past few weeks. I guess it was evident because I was not able to update my blog with new recipes. No matter how busy I get with work, I still make sure that I make a home-cooked meal that I can enjoy for dinner. I was so tired last week that I thought I can just cook Adobo, the Chinese Style that we cook at home. In this way, I can keep some in the fridge for dinner the next day.

By this time, I guess you would wonder what do I mean by Chinese Adobo? I consider adobo a Chinese style if it has hard-boiled eggs or potatoes or taro. Normally, the adobo is sweeter, with generous sauce (not dry), and definitely not too sour.

SAWCLicious: Spicy Basil Chicken

Chicken thigh fillet is not common to see at the groceries here in Brussels. I am only able to find these at the Stockel Market every weekend.  So when I got to buy a kilo of these thigh fillet, I quickly browsed through recipes that I can cook. I found a Thai recipe and thought I can try it out! t was not only very easy to cook but also delicious on top of a freshly cooked white rice.

SAWCLicious Recipe: Chicken Lettuce Wrap

Lettuce wrap is one of my favorite Chinese dishes. The wrap can be minced duck meat, ground pork, or ground chicken. This would normally be the 2nd course for a peking duck menu commonly served at the Chinese restaurants in Manila. I am always amazed with the perfect round circles and enjoy wrapping my own lettuce wrap. At home, my mom would normally cook this version with ground pork. I often see a number of varieties of this dish but always having the lettuce and the hoisin sauce to top it off. Last Sunday, I made my version from ground chicken and I enjoyed this!

SAWCLicious Recipe: Chicken Curry with Potatoes and Carrots

I grew up thinking Chicken Curry is a Chinese dish. Yes, my dad loves chicken curry but cooked in a very different way. We would have potatoes, carrots, and hard-boiled egg with curry. It was a light and delicious dish. I had some green curry paste in my pantry for quite a while and realized I should cook this dish when talking to Pia and David last week.

SAWCLicious Recipes: Chorizo Iberico with Chicken in Tomato Sauce

The day before I left for San Francisco, Daday invited me to have breakfast at her place. After having breakfast, she decided to come over my place to help me pack my things. We ended up together with the 2 lovely Chris for a late lunch. 

It was a lovely weather, sunny, warm, and dry! With great company, I have prepared very simple dishes for lunch which they have enjoyed in my patio. 

Note: Thanks to my wonderful friend Daday who also cut my hair way shorter! Hooray for saving 30 euros!

SAWCLicious: Chicken Macaroni Soup (Chicken Sopas)

SAWCLicious: Lechon Manok - Filipino Style Roasted Chicken

To celebrate Christmas together in Brussels before my friends went back to Manila, we had an early Noche Buena dinner. One of the food that I was craving for is Andok's Lechon Manok. I have Mang Tomas sauce with me, so I decided to do some research on the recipe. This is my own version of Lechon Manok. It turned out to be a really easy recipe (marinade - oven - serve)!

SAWCLicious: 4C - Cindy's Chinese Chicken Congee

It's WINTER time and it's getting colder in Brussels! I just recovered from colds since I came back to foggy Brussels and the weather wasn't supportive enough the whole time. Just right after I recovered from colds, I was craving for hot congee! My family is always startled that I love CONGEE (just like old chinese folks) but hates to eat them when I'm sick! Weird right?

So, since I was craving for some congee, I went ahead and cooked some for myself to enjoy. I have a congee recipe that I learned from my mom and this is not what you would normally eat in a chinese restaurant but it is one of the best congee I have ever tasted! I call it...drum rolls please....
