I had been longing to cook this pasta dish simply because I love clams and pasta! I found a good recipe from Jamie Oliver and had to try it. My friends enjoyed it!
Ingredients

Ingredients
- 1kg small clams
- 2 palm full of fresh flat-leaf parsley
- 5 cloves of garlic
- 15 cherry tomatoes cut into half
- 250ml white wine
- A pack of dried spaghetti/linguine
- 1/4 cup of extra virgin olive oil
- 2 dried chili
- Salt and Pepper
Procedure
- In a pot, boil 1-2 liters of water again and add some rock salt/sea salt. Cook spaghetti/linguine 4-5 minutes less than the package instructions.
- In a pan, add the olive oil and saute garlic and parsley. Season with salt and pepper. Then add the chili, clams, and cherry tomatoes. Pour in the wine and let it simmer for 3-4 minutes. The clams will start to open as it is cooked. Remove the pan from heat and take out the clams that did not open.
- Once pasta is cooked, drain and mix together with the sauce. Bring the pan into low heat while allowing the pasta to absorb the clam juice. Top with some fresh parsley and serve.

ReplyDeleteJust regular clams I found in the grocery. THe smaller ones are sweeter and that's what I used.
