I haven't eaten maja blanca for a long time! So what do you do when you are not in your home country and you miss the dish? You make them... I can assure you this dish is so easy! Maja blanca is a popular Filipino dessert also called Coconut Pudding normally with some corn bits. It is also a common dessert that can be found in Thailand or China. I found some fresh banana leaves that are made into little square shape from the Chinese Store and thought it would be a good mold for my maja blanca. I made a little twist with this dessert by making it creamier like the ones I've tasted in Thailand before. Then I topped it with some toasted coconut that was given to me by a friend who came from the Philippines. My friend loved the maja blanca and the banana wraps so much!
Last Sunday, I don't know what came into my mind, but I just thought of making a new dessert. This is becoming a habit. For 3 consecutive Sundays this month, I have been making desserts! For those who know me, this is really odd cause I'm not a big fan of sweets. I do know what has inspired me this time is the mascarpone cheese sitting in my fridge. It was the left-over after making my mashed potatoes. So, I thought let me make cake based on what I have and whipped up this cake. I only wished that I could have chilled it longer before serving as it was still too soft when I served it to my friends.
Mango-Graham is a no bake cake considered as typical home-made dessert in Manila. It's very easy to make and simply delicious. During the recent weeks, this has become a fad in my apartment simply because my friends and I started craving for it. First time I made it (picture below), I used speculoos biscuits, canned mangoes (bought from the Asian Store), and strawberries. I find speculoos too sweet but still very nice. Last weekend, I came across an American Store in Antwerp and was able to buy graham crackers! I quickly made my second attempt when I reached home and shared it to my colleagues yesterday. They all seem to like it, at least that's what they told me. Try it and let me know!
